Stearic acid is an 18 carbon saturated fat that has intriguing effects on the human body. It's been shown to positively affect mitochondrial activity, and diets that are low in cause mitochondria to change activity and phenotype in negative ways. Mouse models of this fatty acid also suggest some profoundly powerful effects on glucose tolerance and visceral fat when compared to oleic acid (18C monounsaturated fat), and linoleic acid (18C polyunsaturated fat).
