Recipe as follows for RAW VEGAN MARINATED MUSHROOM MARINARA
INGREDIENTS:
4 medium sized cucumbers
Veggies Bullet was the spiralizer that we used (not sure if it's still for sale anymore?)
Garnish: Fresh basil leaves and dried oregano
CHUNKY MUSHROOM:
6 Cremini mushrooms, thinly sliced
2-3 tbsp chopped red onion
1/4 cup fresh peas
(other veggies of choice like carrot, cherry tomato, etc, finely diced)
SAUCE:
1 tbsp coconut aminos
1 tbsp maple syrup
2 tbsp lemon juice
2 cloves of garlic, grated
1/2 tsp dried oregano
MARINARA:
5 pitted medjool dates
1 red bell pepper (without the seeds)
1/2 cup sundried tomatoes
1 small Roma tomato
2 cloves of garlic
1 tbsp tomato powder
1 tbsp miso paste
1/2 tsp smoked paprika
1 tsp apple cider vinegar
1-2 cups water (enough to blend without being too thin)
Blend on HIGH SPEED for 2 minutes to warm it up
1/2 cup fresh basil and 1 tsp dried oregano to add after blended just to pulse into the sauce

ASSEMBLY:
• Slice the mushrooms, onion and other veggies of choice and marinate in the sauce in the dehydrator for an hour at 115F
• Spiralize the cucumber
• Blend the marinara ingredients on high to warm
• Take the veggies out of the dehydrator and into a large bowl
• Pour the sauce over them and mix
• Serve on top of the cucumber noodles!
