September 4, 2024 ~ Lucy Ann Lance talks with Raul Rojo, Jalisco Mexican Restaurant & Cantina. Jalisco Mexican Restaurant and Cantina has recently opened in Saline, Michigan, occupying the former Ruby Tuesdays location. Owned by Raul Rojo, originally from Aranda Jalisco, Mexico, this is his third restaurant, following two Cancun Mexican Restaurants and Cantinas in Fenton and Linden, Michigan. The new name “Jalisco” was chosen to avoid a naming conflict and pay homage to their homeland, driven by customer demand for a closer location.
