Friday Spaghetti Recipe

Growing up in a large Catholic family meant meat-

less Fridays (with fish being an exception). So, my

mother’s culinary creativity always came to the

rescue in preparing some terrific meals that didn’t

rely on meat as the main ingredient. This is one

of mom’s famous recipes and one that my brother

Tom has guarded, due to it being his absolute

favorite meal.

1 whole onion, chopped

1 whole pepper, chopped

11⁄2 sticks butter

18 ounces tomato paste

1 to 2 pounds spaghetti

Saute onions and pepper in pan with a little water

and a little butter until the onions become transpar-

ent. Add tomato paste and one stick butter. Stir

and cook until tomato paste becomes thinner. Add

the remaining 1⁄2 stick butter into the cause after

the first one has melted.

Cook spaghetti and drain.

To combine: Put a third of spaghetti back into

the pot (You can use the same pot you boiled the

spaghetti in — just give it a quick rinse). Then, add

a third of sauce. Repeat this two more times. Stir it

all up and there you have it!

Don’t let the simple ingredients fool you. This is an

outstanding meal! It’s easy to make and tastes great.

You’ll find yourself going for third helpings. You can

refrigerate the leftovers (if any is left). But be careful!

Friday Spaghetti lovers have been known to raid

the refrigerator late at night and eat this dish cold

(it’s that good). Eating cold Friday Spaghetti was my

brother Tom’s claim to fame in our family.
