As detailed in the film, Across the Spider-Verse, a canon event is a moment or action that must happen to certain Spider-Men – otherwise their universe risks being destroyed. Of course, none of the members of this podcast hold such power (or responsibility) so no universes are at risk. They're just describing moments that makes them them.
