Vienna - Cool bar with a great view - 25 hours hotel, rooftop - they might try to act like it is sold out but it’s not; wait a little. 
Vienna - Extremely old bar with an ' authentic' atmosphere - Cafe Bendl - people throw coasters at each other, have a jukebox, cheap shots called 'koks', if you love dive bars. 
In Budapest, Szimpla Kert is now one of our favorite pubs in the world. So much to be discovered inside this ruin bar.
