Nikki set up REfUSE with her best friend Mim Skinner in 2015 in response to discovering huge amounts of perfectly edible food being thrown away by local supermarkets. REfUSE is based out of a busy ‘pay as you feel’ café on Chester le Street high street, where around 13 tons of food per month is rescued from otherwise going to waste. Nikki is an activist and campaigner for food system transformation from the grassroots, determined to make healthy, sustainable food accessible for all.
