Tait Tenbarge is the founder and head chef of Blue Bird Hot Chicken, a southern Indiana food truck known for its original take on Nashville-style hot chicken. After starting out in restaurants as a teenager and later leading kitchens at Haub’s Steak House and R’z Cafe, Tait built Blue Bird from the ground up, transforming an old school bus into a state-of-the-art food truck with the help of family and friends. In this episode, he shares the story behind the truck, the 31 attempts it took to perfect his hot chicken recipe, and the grit, creativity, and family support that turned Blue Bird into one of the Tri-State’s most talked-about food trucks.
