Brooke's family Oatmeal Date Cookie recipe:
1 1/2 c brown sugar, 1 c butter, 3 c oatmeal (ground fine), 1/2 c buttermilk, 1 tsp baking soda, 1 tsp vanilla, add about 2 cups flour and roll out to about 1/4 inch thickness. Cut out with small mouth jar lid and bake on parchment paper at 375 degrees for 7-10 minutes. Date filling: On stove top, stir and cook until thick - 1 c diced dates, 1/2 c sugar, 1 T flour, 1 c water. Refrigerate and spread on cookie just before eating. Enjoy!
