“Individual choices have a big impact,” states Katie Davis, and this is an idea that she lives by as she began with a simple interest in Biochemistry which led to her becoming the Director of Regulatory Affairs at Apeel, a company that created a plant-based edible coating that makes avocados and citrus fruits last twice as long as usual.
