For today’s episode, I am joined by Dalina Soto, a Spanish speaking registered dietitian who uses her platform to reduce the fear around cultural foods. Rice, tortillas, and beans are foods that are loved by many cultures, but are often labeled as “problematic” for managing your insulin levels and carb intake. 

Dalina shares why it is important to be respectful of cultural food differences, the roles of culture and health, and the merging of nutrition science and cultural foods. We then talk about its impact on individuals with PCOS, especially how to manage carbohydrates in a way that allows you to still enjoy them, but also gives your body what it needs. Last, Dalina discusses the gaps on this subject not only in the training of healthcare professionals, but also in the snippets that are shared and consumed on social media.
