Jack Zheng’s egg tart recipe:

• Roll out the butter between parchment paper
• Refrigerate till solid
• Place butter in the centre of the dough
• Fold like an envelope
• Roll out flat
• Repeat 2 times
• Divide into portions
• Press into tart tins
• Fill
• Bake!
