We speak with Franco-Palestinian chef Fadi Kattan who enlightens us on what it is like to run his boutique Hosh Al Syrain and its Fawda Cafe in the heart of Bethlehem. As part of one of the “oldest Christian families in Bethlehem,” Fadi provides us with a unique perspective on his experiences as a Palestinian chef and how he wishes to revitalize Palestinian cuisine by returning it to its roots.
