Reputedly named for a Scandinavian king, Chicken Oscar uses chicken instead of veal and is topped with crab, asparagus, and a velvety butter sauce. Chef Curtiss Hemm says it has royal cachet, and is one of his wife's favorite dishes. It's an ideal dish for Valentine's Day, or as winter comfort food.
