Back in the day, milk cows were a staple of every mixed farm. Families drank whole milk, separated the cream and made butter. The skimmed milk went to the pigs to make bacon. Early in the 20th century farms began specializing in producing milk. The Philippot family in St Claude is a third, and soon to be fourth, generation dairy farm.
