VANILLA APEROL SOUR

frozen rocks glass rimmed with simple syrup, sugar, lemon zest.

1 egg white

1oz vanilla syrup (1 part sugar, 1 part water, dash of vanilla)

1oz fresh squeezed lemon juice

2oz aperol

dry shake, then ice shake

strain over ice

garnish with blood orange slice
