Arby's Roast Beef vs Real Beef — What's Actually Inside?
Arby's roast beef is one of the most debated meats in fast food history — but what does it actually look like under a microscope? We put Arby's, Great Value deli roast beef, and Boar's Head butcher-grade meat side by side, and the microscope doesn't lie.
In this investigation, Mr. Bill examines three roast beef samples at multiple magnifications: Arby's fast food roast beef, Walmart Great Value thin-sliced deli roast beef, and Boar's Head Low Sodium Deluxe — a butcher-quality cut. Samples are prepared with distilled water and cover slips, then examined from 40x through 1000x oil immersion for a true cellular-level comparison.
At 100x magnification, the structural differences between processed and butcher-grade meat become immediately apparent. The Arby's sample reveals a dense, homogenous protein matrix with minimal intact myofibril architecture — consistent with mechanically processed and reformed meat product. The Great Value sample shows similar processing signatures with visible starch binders throughout the cellular structure.
The Boar's Head sample tells a completely different story at 400x — intact sarcomeres, visible connective tissue (myocommata), and preserved muscle fiber alignment consistent with a whole-cut, minimally processed beef product.
