It is believed sourdough originated in Ancient Egyptian times around 1500 BC. Making sourdough bread in a home kitchen is likely to give the home baker a fresh respect for the work that goes into running a bakery because it's not something you can just 'whip up'...It requires a starter, which is living 'wild' yeast that has been nurtured and allowed to grow for several days before it is ready to be used. San Francisco sourdough is the most famous sourdough bread made in the United States today because it has remained in continuous production since 1849, with some bakeries able to trace their starters back to California's Gold Rush period. Sourdough fermentation can break down gluten and other compounds, making the bread more digestible and potentially beneficial for those with sensitivities.
