Melva’s Meatloaf

Prep Time: 20 min Cook Time: 1 hr
Ingredients
1.5 lbs Ground Beef 80/20
1 Eggs
1/4 cup Milk
1 Cup or 2 slices Bread Crumbs, Cut into small cubes
1 tsp Ground Mild Chili Powder, Santa Rita Spice Company is our pick
1 tsp Salt
1/4 tsp Pepper
1 small or 1/2 medium Diced Onion
1/4 cup Ketchup, Substiute half and half Ketchup/BBQ Sauce or all BBQ Sauce
6 dashes Worcestershire Sauce
Optional: Dryed Thyme, Seasoned salt, onion powder, garlic powder, Cayenne pepper, One
4oz can of sliced mushrooms.
Preparation Steps
1. The day before or the morning of the bake, lightly toast two slices of bread and let them
dry out in the toaster.
2. Preheat over to 350 F.
3. Place the egg, milk, and dry seasonings in a large mixing bowl. Wisk until well combined.
4. Add a handful of the Ground Beef, top with some of the bread crumbs, onions and
optional ingredients. Repeat until all the ingredients are in the bowl. Mix with your hands
until well combined.
5. Place into a loaf pan leaving some room on the end for the grease to collect.
6. Bake at 350 F for 1 hour until done. My mother said “When it starts to pull away from the
sides of the pan it is done. The more scientific method is: until its internal temperature
reaches 155 F on an instant read thermometer.
7. Remove from the oven and top with a squiggle of BBQ Sauce.
