Karen O’Donoghue is the owner of the Happy Tummy Co. a bakery and cooking school in Westport, County Mayo. Driven by her mother’s cancer diagnosis and her own issues with IBS, Karen spent years developing a recipe for a tasty, nourishing loaf that—you guessed it—will help make you poo!
