Alisha’s Avocado Toast with Scrambled Eggs
Ingredients
Avocado (Fresh Avocado or Prepackaged Avocado Mash)
Bread (Dave’s Killer Bread – White Bread Done Right) https://www.daveskillerbread.com/white-bread-done-right
Eggs
Olive Oil
Fresh juice from a lime
Salt
Pepper
Recipe
Avocado Mash
Carefully remove the skin and seed from a ripened fresh avocado. Place the green flesh of the avocado in a mixing bowl. Using a metal fork, mash the avocado, this is something that your 5–7-year-old would enjoy doing with you. Once your child has the hang of mashing and is doing well, let them mash on! You can move forward to something else while keeping an eye on the mashing. Once you and your child have finished mashing the avocado to. Your liking, sprinkle in two pinches of salt, one pinch of pepper and a ¼ teaspoon of lime juice. With a spoon, stir the avocado, salt, pepper and lime juice together.
Scrambled Eggs
Crack two eggs in a bowl, mix the eggs with a fork until the mixture looks yellow and the whites are fully combined with the yolks. Season the egg mixture with a pinch of salt and a pinch of pepper, mix the seasoning with the eggs. Once the egg mixture is fully combined, set your bowl of eggs to the side. Add olive oil to your pan, turn it on medium to heat the oil for about 30 seconds. Once the oil is heated, turn the pan up to medium/high heat around 6-7 on a gas stove, add the eggs and allow the eggs to cook for about 15 seconds. Next, using a non-stick, heat-resistant spatula/ turner, move the eggs around the pan to ensure even cooking. Watch the eggs closely. Once the eggs are evenly cooked, they should appear a bright yellow color with a fluffy, soft and moist texture.
Toast
Take two slices of Dave’s Killer Bread (White Bread Done Right) and place it on a baking sheet. Put your baking sheet in an oven at 350 degrees F for about 1-2 minutes. If you have a toaster, you can place your bread in the toaster instead of the oven.
Once all items mashed, cooked and toasted, spread the avocado mash on the toast and then add the eggs on top. Repeat this for your second slice of toast and enjoy! Your heart and your mind will thank you for this one!
