As the holidays — and perhaps more significantly — the National Football League postseason — approaches, Wisconsinites traditionally gather to celebrate the new year and the progress of the Green Bay Packers through the playoffs. Among the traditional fare served at such events are the blue-collar version of steak tartare, known as “cannibal sandwiches.” Raw ground beef and onions served on rye bread — the tradition continues, albeit with perhaps less vigor in a more health-conscious era. University of Wisconsin Extension meat specialist Jeff Sindelar joined the Buzz on December 21, 2020 with some caution and advice.
