When the pandemic hit, Prairie View A&M University alumnae Vernita Harris and Beatrice Moore noticed the heightened food shortages and how more families were coming back to the dinner table again.

“Most children get their meals from school. The pandemic changed that,” said Harris.

So, they decided to team up for a great cause and some easy-to-make recipes with their cookbook Pinch-Dash-Done: A Gateway to Flavorful Recipes.

While the cookbook offers recipes and creative ways to spice up meals with Tex-Mex, Southern, Italian, and Caribbean influences, the book also has a philanthropic aspect. Proceeds from sales go towards creating scholarships at the Prairie View A&M University College of Agriculture and Business, and they’ve also teamed up with the Houston Food Bank to help with food insecurity within the local community.

In this episode, the co-authors not only share their favorite recipes, but callers weigh in on some of their own favorite and easy recipes as well.
