From working under award winning chefs in Atlanta, to moving to Pensacola knowing little to no-one, Eric's journey from employee to business owner is an inspiring one. We talk with him about all things entrepreneurship, and what made him go all in on his business. Eric's experience in the culinary industry has helped Two Birds Street Food become one of the staples in the Pensacola food truck scene.
When you think of eating at a food truck, does sous vide octopus come to mind as something that may be on the menu? Yeah, we didn't think so either - but that's the type of creative, mouth-watering food that Eric puts out on his menu.
