Today on cooking with Chenelle the visually impaired way. I share my carrot cake recipe with everyone who loves carrot cake. Do you ingredients are: 2 cups of chopped carrots, one package of softened cream cheese, three eggs, 1 tablespoon of vanilla extract 1 tablespoon of baking soda 1 tablespoon of baking powder 1/2 teaspoon of cardamom 1/2 teaspoon of ginger 1/2 teaspoon cinnamon 1/2 teaspoon of clothes 1/2 teaspoon of nutmeg 1/2 teaspoon salt 2 1/2 cups flour sifted One cup and 2/3 cup brown sugar 1 cup 1/4 cup olive oil you can also add chopped walnuts and raisins if you like to the batter. Set oven to 350°F inside talking timer for 40 minutes grease and flour lightly two 9 inch round baking pans please batter into pan‘s place and to oven after 40 minutes take out of oven place on cooling racks for 10 to 15 minutes to cool. I hope you enjoy this recipe is much is I did I did not make a frosting for this cake.
