Deer Valley Utah’s Extraordinary Fireside Dining

As we entered the grand wooden lodge that reminded me of the Old Faithful Inn at Yellowstone, I knew this was a special place. What I didn’t know was how amazing the meal was going to be. The first hint of the feast that was about to begin was our walk to the table. We passed by the dessert station and held an ice cream bar, three hot pots of fondue, fruit and pound cake for fondue dipping, a cranberry-apple galette, and gobs of toppings for ice cream. Maybe the staff parades customers past the desserts to remind us to save room? We were seated by the huge fireplace that held two halves of a raclette wheel. An ingenious contraption held each half securely as the roaring fire did its magical task of melting the cheese. I was hypnotized by the dripping cheese that the cheese chef caught in a plate for us lucky diners. A stack of some 12 or so plates stayed warm by the fire until a hungry diner came to receive this cheesy gift.
