Marinated Chicken –
For the Marinade 2 limes ¼ cup tarragon, chopped 2 rosemary sprigs ¼ c white wine vinegar ¼ cup white wine 1/4 cup olive oil 1 tablespoon salt 2 Ziploc bags for marinating
For the Chicken ¼ cup olive oil 1 chicken 1 lime 1 orange ¼ cup white wine ¼ cup honey Salt and Pepper
- Combine the marinade ingredients and pour over chicken. Marinate for 1 hour, turning occasionally
- Remove the chicken from the marinade and pat dry with a paper towel. Strain and reserve the marinade liquid.
- In a large sauté pan, heat the oil and then thoroughly brown the chicken on all sides.
- Add the marinade to the pan, along with the juice from the lime and orange, and the white wine. Cover and cook until done, adding more liquid if necessary.
- Remove the chicken from the pan and stir in the honey.
