Privateer Portobellos
Ingredients:
•4 or more Portobello caps – lightly rinsed, and the ribs removed.
•2-3 medium tomatoes – diced.
•1/4 cup of Green Onions – sliced
•1/2 cup of feta – crumbled. You could use mozza or goat cheese here as well.
•Tbsp fresh parsley – minced
•2-3 cloves of Garlic - minced
•tsp of Oregano
•1/4 cup of olive oil
•salt and pepper to taste
