Eileen Andrade on growing up in a Cuban restaurant family, bringing new ideas to the burbs

Eileen Andrade became well known to Miami diners when she opened Finka, a Cuban-Korean-Peruvian fusion restaurant. Finka is now five years old and Eileen also has a second restaurant, Amelia's 1931. Both restaurants are in the suburbs West of Miami. She grew up in the family behind Islas Canarias, one of Miami's most popular Cuban restaurants and the consensus source for the best croquetas in the city. In this interview, she talks about her Cuban heritage, walking away from the fashion industry to join her family's business, and what it took to establish herself and her food as distinct in the minds of restaurant patrons in Miami.
