The talmud would says when we make a blessing we are permitted to eat food if we don't make the blessing it is as if we are eating sanctified food which is not permitted. How does the blessing remove the sanctity? By making a blessing we are acknowledging we are the servants of God and if we are a servant of a Cohen we can eat sanctified food and the same thing will be when we consider ourselves servants of God
