Shannon Walker is first and foremost a Butcher but add on to that a Teacher of Animal Welfare & Game Harvesting, Publisher of The Butcher's Cookbook and Braintrust behind the Butcher Wars Competition at Meatstock. 

In this episode Shannon gives us some great insights into game harvesting within Australia and what it means to him to be a teacher of these practices. We also chat about the process behind the newly released Butcher's Cookbook and the challenges that came with organising 100 recipes from 50 butchers from across Australia.
