James Smith AKA The Tattooed Butcher. This award winning legend stole the competitive butchering scene just six months after starting his apprenticeship. He shares with us all that he has learned from his experiences and how this fuelled his confidence to build and run his own brand 'The Tattooed Butcher'.  

Dedicated to teaching others, James runs his own 'nose to tail' butchering and barbecuing classes and shares multiple recipes and demonstrations  on his socials. On top of this, he represents his country, New Zealand, on the world stage as part of their National Butchery Team, The Sharp Blacks.
