RECIPE: Chimichurr-ish
*This adaptation of the herbaceous South American sauce. Chimichurri is a delicious way to use up lots of herbs. Use this as a guide, but have fun switching it up to your tastes and what you have on hand.
Throw everything in a blender or food processor & pulse to desired consistency. Traditionally chimichurri is on the chunky side. This can be accomplished by finely chopping everything by hand or by being careful to not over mix in a blender. I like it a little smoother, so I just use a blender. This can be stored in the fridge for at least a week. I like to live on the wild side and will keep it a few weeks. Not dead yet!
