This week Brandon and I review a sample sent to us by River Roots. At the time I didn't know the details of the sample. Since the Ep I have learned what it was we were drinking. It was a 3 barrel blend. All three barrels were 11 year KY bourbon. 2 barrels were further aged in 20 year light whiskey barrels. The light whiskey barrels concentrated the whiskey and intensified the structure (according to Ryan from RR). The LW added 10 proof points to the whiskey that was put into them. after the LW aging Ryan thought it was unbalanced so he added all three barrels brought back together and then put into 8 year wheated bourbon barrels. He did that to round out the flavor and soften the rough edges.
