Ogre: Aunt Ana’s Tres Leches Rice Pudding
Ingredients:
* One 14 oz. can of condensed milk
* One 12 oz. can of evaporated milk
* One cup of milk. Whole preferably, but 2% is OK. Skim, not so much. Lactaid milk works just fine.
* One and one-quarter cup of short grain rice. This is really important. It has to be short grain, not medium or long. Short grain is sticky, and without it, the pudding is just loose and bleh. I use sushi rice, but if you have a different short-grain rice you prefer, go for it.
You absolutely do not need to add sugar to this unless you have a monster sweet tooth or a diabetic death wish.Optional extras:
* 1 cup of raisins, more or less, depending on how much you like in your pudding.
* 1 cup of coconut flakes or half a cup of cream of coconut (not coconut milk, that’s completely different and not useful for this recipe), or both if you really want that coconut flavor in there.
* 3 cinnamon sticks and or cinnamon powder - I’ll explain what to do with this in a second.
Instructions:
Set the rice up to cook as normal.
When the rice is almost done, add the three milks to a medium pot and heat to just under a boil on a medium to low flame. Milk burns easily, so be careful and stir it frequently. If you want a cinnamon flavor, add the sticks to the milk and let it cook the entire time. The flavor will release into the liquid. If you want coconut, add the cream when you put the milks together. The same with the raisins, so they get nice and plump. You COULD add all of it, but coconut cinnamon raisin rice pudding sounds a bit overwhelming.When the milk is just starting to boil, shut off the heat and add the rice. Stir it in good and break up any chunks so it’s nice and even. Add the coconut flakes if you’re using them. Leave the cinnamon sticks in if you’re doing that. Pour the whole thing into a bowl or a Pyrex and smooth it out, breaking up any last chunks. It’s going to be liquidy. Don’t worry, the rice will absorb some of the liquid and you’ll be left with a nice and creamy pudding when it cools and sets. That takes about 4-5 hours. Dust the top with cinnamon powder if you’re using it. You can tinker with the amount of rice if you prefer your pudding soupier (go with a cup of rice) or more dry (go with one and a third cups of rice). Play around with it and find your, ahem, sweet spot.
And that’s it. My Aunt Anna’s Tres Leches rice pudding.
Grandma Florida Woman’s Stuffing
Ingredients:
* 1 stick of butter
* 1 large onion (or a couple of medium onions)
* 5 celery stalks
* 1 tube of regular Jimmy Dean’s sausage
* 1 ½ loaves white bread (or whatever you prefer)**
* 2 eggs
* Salt and pepper
Instructions:
Dice the onion and celery. Melt the butter in a pan and throw saute the onions and celery. Season it with salt and pepper. Let it cool down when it is soft.
In another pan, fry the sausage. When it’s finished, place it on paper towels to drain the grease.
In a mixing bowl, combine the sausage and veggies. When that’s finished, start tearing the bread apart and throw it in the bowl. Be sure to save one of the bread butts. Add the two eggs to the bowl as well.
Squish everything together. My mom wears gloves for this part. I never remember to purchase the gloves, so I just wash my hands. You can add more salt and pepper if you’d like, then shove the stuffing in the turkey’s cavity. Stick the saved bread butt to the hole’s opening to keep the stuffing inside, like a little bread door.
Don’t forget to remove the stuffing as soon as the bird rests for 20 minutes. You don’t want to get a case of food poisoning after you spend the day fighting with your family about politics.
If you would rather bake the stuffing separately, put little pats of butter on top of it to keep it moist.
** My mom always leaves the bread bags open for a few days to get it slightly stale. I never do that because I forget to do it every single time without fail. You do whatever you want.
