Baby due today, dance school to run and baking to be done, easy peasy.

I sit down with Eilis on her baby’s due date to have a very positive chat about pregnancy check-ups during this time, how pastry chefs are keeping busy and how she has adapting to running a virtual dance school. She has always had many plates to spin, but nature has forced her to slow down, and she seems to be at peace with that.
