Ingredients:
1 head of iceberg lettuce (chopped)
1 can of garbanzo beans
1/4 cup of thinly sliced red onion
1 cucumber sliced and cut in half (like little half moons)
1/2 box of pasta (I like to use rotini)
Cilantro lime dressing, about 1/3 cup (like this one, or something equivalent)
1/4 cup shredded Parmesan cheese
1/3 cup cilantro (to mix in and add as a garnish)
Cook pasta per the instructions on the box. Rinse with cold water until the pasta is cold. Combine salad ingredients with the pasta in a large bowl. Add dressing to salad, mix, serve! This is a pretty hearty salad and could be great with some cherry tomatoes, or even chicken. Enjoy!
