Emmas Two-soup :
Ingredients :
2 onions, 2 sticks of celery, 2 carrots, 2 potatoes and 2 tins of tomatoes
Method :
1. Dice vegetables into bite-size pieces.
2. Add 2 tablespoons of oil to a large pan on high heat and heat up for 1 minute.
3. Add diced onions, celery and carrots. Stir.
4. Put lid on pot and reduce heat to sweat vegetables for 5 mins. Stir occasionally and add a spoon or two of water to prevent veg from sticking to pot if necessary.
5. Remove the lid and add the 2 tins of tomatoes and the diced potatoes. Season.
6. Turn the heat up and bring to a boil. Then reduce to a simmer for a further 20 mins or until the potatoes are tender.
7. Remove from heat and blitz with a stick blender.
8. Season to taste.
Garnish with herbs, chilli oil or chill flakes if desired.
