My name is Erin and I am the Nutrition Professional behind Mindset Nutrition! I am a mom, wife and a lover of musical theater, staying active, talking and all things pink! My greatest love is educating others on how much our mindset determines the success of our health and how to use food as nourishment and not a security blanket.
My Background
I fell in love with food and nutrition at a very young age. I battled my weight growing up and used food as entertainment and comfort. When I grew old enough to make more adult choices I began switching the foods I was eating to healthier options. This change sparked years of restricting and food obsession. Thankfully, right after I got married in 2006, I began working on my mind instead of my body. Learning to retrain my thoughts and replace food with alternate ways of coping was life changing!
Credentials
I started my college career at The University of Missouri - Columbia, where I earned a Bachelor's Degree in Education. Soon after, I earned my Master's Degree in Education from Lindenwood University. I taught for seven years and decided to make a career change. I wanted to combine my love of teaching others with my love of health and wellness. So I earned my Master's Degree in Nutrition and Human Performance from Logan University. Since, I became certified as an Eating Disorder Recovery Coach, specializing emotional eating.
