Erin Darling of Mindset Nutrition in Cottleville, Mo joins us today on the podcast and shares so much amazing information about nutrition and mindset. She begins with telling us a little about her own journey of nutrition and wellness starting with being overweight as a child to swinging to the other extreme of obsessive calorie tracking.  Erin talks about having to shift from the short term health mind to long term health success with her eating and mindset. She goes on to tell us about shifting to nutritional coaching as a second career and finding her passion to help individuals who are struggling with emotional/binge eating. Let's be honest who doesn't struggle with that type of eating?

Erin talks to us about  finding the things that bring you joy, understanding your worth, self love, and self care as a path to control emotional eating. She explains the triggers for binge eating and how to make yourself aware, and how to avoid those triggers. Erin also discusses the importance of meal planning, mindfulness, addressing limiting beliefs, intermittent fasting, and meditation as a means of shifting yourself to a healthy lifestyle.  She is huge on helping people understanding that you should eat the foods you love, but that also love you back. Erin Darling Bio:
My name is Erin and I am the Nutrition Professional behind Mindset Nutrition! I am a mom, wife and a  lover of musical theater, staying active, talking  and all things pink!  My greatest love is educating others on how much our mindset determines the success of our health and how to use food as nourishment and not a security blanket. 

My Background

I fell in love with food and nutrition at a very young age.  I battled my weight growing up and used food as entertainment and comfort. When I grew old enough to make more adult choices I began switching the foods I was eating to healthier options. This change sparked years of restricting and food obsession. Thankfully, right after I got married in 2006, I began working on my mind instead of my body.  Learning to retrain my thoughts and replace food with alternate ways of coping was life changing!

Credentials

I started my college career at The University of Missouri - Columbia, where I earned a Bachelor's Degree in Education. Soon after, I earned my Master's Degree in Education from Lindenwood University.  I taught for seven years and decided to make a career change. I wanted to combine my love of teaching others with my love of health and wellness. So I earned my Master's Degree in Nutrition and Human Performance from Logan University.  Since, I became certified as an Eating Disorder Recovery Coach, specializing emotional eating.
