In this episode, we sit down with Ivan, owner of Las Brasas Mexican Grill. During this episode, we dive into Ivan's past and how he first got interested in cooking, and ultimately what led him to open a food truck with his in-laws. We discuss some of the hardships that they faced early on where they either had little to no business some days, to not having a place to call home for their food truck. During this time it was hard to gain traction and find a following for his business to start taking off. Between hard work, determination, and the support from some key individuals around the area, Ivan and his family were able to work at not only building a name for themselves and the truck but find a place to call home at the Prairie Pavilion.
A couple of years later their food truck is busier than ever and one of the places that friends and family recommend to anyone that will listen. Ivan gives us some insight into not only being a business owner, but some of the challenges he faced earlier on from learning how to prep and prepare for each day, but also how to handle catering as he quickly found out they are their own animal and different from simply making and serving food at an event.
