Joseph Archbold is the chef of the restaurants Receta Michila and Octo in Bocas del Toro, Panama. After working at top restaurants in France, he took over the kitchen of the hotel his mother once cooked at while working to strengthen the island’s foodways and resurrect recipes that were being forgotten.
