I love easy recipes that make it seem like I've been slaving in the kitchen- here's one of my favorite's that's sure to wow and satisfy friends and family.
Heat Oven to 350 in medium mixing bowl:
1 bag frozen brown rice (I use Trader Joe's but any will do)
Dash of favorite salsa
1 cup shredded cheese ( Mexican mix best)
Dash Rick Bayless green enchilada pack (found at most grocery)
2 cans chicken ( I use Trader Joe's but again you can find this anywhere) MIX ingredients
Baking dish: If your extra lazy or short on time (like me!) 2-3 tortillas on bottom- then mix then top with 2-3 tortillas with remaining green enchilada sauce and cheese. Bake 20 minutes. Yum! You're welcome!
