Shrimp Pasta with Shallots and Feta: Inspired by one of the recipes in my cookbook The Weeknight Mediterranean Kitchen
Saute shallots and garlic in olive oil until translucent, then add shrimp and cook for a few minutes until just cooked through. Add chopped tomatoes, splash of white wine and roughly torn basil. Stir to combine and serve with cooked pasta. Top with crumbled feta and serve.
