Grilled Tomato Pie: It’s easy and luscious. Bake a pre-made store-bought pie shell, and while it cooks, cut local tomatoes in half across the equator and grill them about 5 minutes per side. When they’re nicely browned, chop them up and put them in a bowl with salt and pepper and diced garlic, basil and scallions. Put the mixture in the baked pie shell and top it with lots of freshly grated parmesan cheese.
