Frozen Vegetables: Budget-Friendly and Healthy Dinner Ideas with Sharon Palmer

In this episode, I had the pleasure of speaking with Sharon Palmer, the Plant-Powered Dietitian  and the author of several plant-based cookbooks including "California Vegan" and "The Plant-Powered Diet". We discuss the benefits of frozen vegetables and how they can be a cost-effective and nutritious addition to a plant-based diet. Sharon shares some great tips on how to properly store and prepare frozen vegetables, as well as some delicious and easy meal ideas that can be made with them. 

We also touch on the misconception that plant-based diets are bland and boring, and Sharon emphasizes the importance of using herbs and spices to add flavor to meals. She also highlights the variety of plant-based cuisines from around the world that are full of flavor and texture. 

Throughout this episode, Sharon emphasizes the importance of having an open mind and being willing to try new things when transitioning to a plant-based diet.  She also provides some great resources for listeners who are interested in learning more about plant-based eating, including her cookbooks and her website.  It was a great conversation full of valuable information for anyone interested in incorporating more plant-based meals into their diet.
