Game Bird & Waterfowl Jerky & Pepperoni Sticks

Jerky is a popular cooking/preserving method with all kinds of wild game meat. Made with ground or whole muscle meat portions, it’s easy to make jerky at home. Pepperoni sticks take a little more preparation but making them at home allows you to come up with an endless variety of flavor profiles. We will discuss two methods of forming pepperoni; stuffing casings or using a jerky gun that requires no casing. If you’ve never tried a jerky gun, it’s a great tool when it comes to home sausage, ground jerky and “bacon” making. Focusing on game birds and waterfowl, these meats can be mixed for combo-sausages. For instance, adding ground pheasant to duck will mellow the flavor. Adding ground pork or beef to a wild bird will add more moisture to your creation. Making ground jerky, pepperoni sticks and/or sausage is a great project when cleaning out your freezer a few times a year.
