Cathy spent nearly 20 years helping groups and individuals develop healthy relationships with food, and serving as a fierce advocate of preventive nutrition and fitness habits for health when she received a breast cancer diagnosis that put her own proactive self-care practices to the test, with a very favorable outcome for which she is beyond grateful.

 We are very happy to have Cathy on the show today as she talks about how she using her instant pot for healthy meal prep that is vegan and plant-based. She shares with us her 3 go to meal ideas and how she reinvents leftovers into amazing soups and stews.
