Make display setting bespoke for activities,
i.e for normal use I have my watch set for Not always on gesture control
For my hiking, Trail running the same but can have different brightness if required
But for the Gym where I sometimes need to look at data without being able to tilt I have set to always be on
Also set button lock from here

Remember about button lock
Tap power button once – select lock keys – tap power button to unlock
Montana 700 tap power button once padlock icon

By default single tap of power button takes screen off to save battery and lock
Settings – system – Keys – Power Short press lock (or lock screen on)
