I got to spend an hour with the Head Cheese at Nat’s.  Very generously he sat with me and I had a wonderful time listening to his story.  Thanks Nat!  Before you do the same with this podcast, go grab a Cheese Slice.  It’s simply the best combo of dough, tomato and cheese.  Hold it with your index finger, third finger and thumb and kind of fold it, crimp-like, while standing.  No utensils required.  You might need a napkin or two!  Check out the chalk art all over Nat’s walls.   Eat + repeat.  Enjoy!
