Grilled Chicken with Roasted Vegetables

  • 2 zucchinis, sliced (about 250g/8oz)
  • 2 tablespoons olive oil
  • 1 tablespoon dried oregano
  • 1 tablespoon garlic powder
  • Salt and pepper to taste

  1. Preheat your grill to medium-high heat.
  2. In a large bowl, mix together the sliced vegetables, olive oil, dried oregano, garlic powder, salt, and pepper.
  3. Toss the vegetables until they are evenly coated with the seasoning.
  4. Grill the vegetables for 10-12 minutes or until they are tender and lightly charred, turning them occasionally.
  5. While the vegetables are grilling, season the chicken breasts with salt and pepper.
  6. Grill the chicken breasts for 6-7 minutes per side or until they are cooked through and the juices run clear.
  7. Serve the grilled chicken with the roasted vegetables on the side.
